Weekday mornings can be hectic so I’m always looking for ways to create healthy and tasty morning meals that don’t take long to prepare.
I’ve never been a huge oatmeal fan but this easy recipe has me (and my kids) hooked!
Oats are a high fibre food with many benefits, including weight and cholesterol management. Adding other superfoods such as chia and hemp seeds makes this meal a protein and omega rich breakfast that sticks to your ribs! I often serve with a green smoothie drink, another easy to option to take with you when you are on the run.
In a mason jar, combine 1/2 cup rolled oats with 3/4 cup almond or hemp milk, a splash of maple syrup (or stevia) and 1/4 tsp cinnamon.
Cover and let sit in fridge overnight.
We like our oatmeal warm, so in the morning I heat the goodness up in a pan and add chopped fruit (strawberry season is here!) and top with chia and hemp seeds. If you’re on the go, you can add the fruit and other toppings to the mason jar to take with you.
I have made these oats 2 days in advance and they were just as tasty on the second day. I will often make a “double batch” that will give us two easy morning breakfast options with very little effort.
